A sparkling wine made from Moscato grapes grown in the Colli Euganei, an area of central Veneto with a long winemaking tradition. After harvesting, the grapes are gently crushed and then cold-macerated at around 5°C for 12 hours. The must is separated from the skins by light pressing and kept at very low temperatures to prevent fermentation. The sparkling process that follows begins with the addition of selected yeasts directly to the must. The resulting wine has the fresh, fragrant character of the original grapes, a low alcohol content and a pleasant sweetness on the palate.
