We produce a sparkling wine of great personality and structure, which boasts the distinction of being the first brut ever made from Nerello Mascalese grapes. Their high acidity, low colour concentration and many other qualities that come from the terroir make these grapes particularly well suited to producing Traditional Method sparkling wines.
The grapes are harvested before they are fully ripe and gently pressed to minimise colour extraction from the skins. After settling, the must ferments in stainless steel at a controlled temperature (16°C).
