Winemaking
The whole grapes are placed in a pneumatic press, and the must obtained from the soft pressing, after a first racking, is transferred to temperature-controlled tanks, where alcoholic fermentation takes place at 17-19°C. The wine is then left to mature until the following spring.
Production
Once the cuvée has been created by blending the two wines and the yeasts selected by Villa Sandi have been carefully added, the wine is bottled. The bottles are then stacked in the company’s oldest underground cellar, at constant temperature and humidity. Here the second fermentation takes place, followed by ageing of the sparkling wine on its lees for at least 36 months. After this period the wine is disgorged and, only after a further two months’ rest, is it ready to be released.
