Winemaking
The destemmed and crushed grapes are placed in a pneumatic press, where they are left to macerate for a few hours to obtain a light extraction of colour. Soft pressing yields a must of an attractive pink hue which, after a first racking, is transferred to temperature-controlled tanks, where alcoholic fermentation takes place at 17-19°C. The wine is then left to mature for a few months.
Production
In spring, once the yeasts selected by Villa Sandi have been carefully added, the wine is bottled. The bottles are then stacked in the underground cellars at constant temperature and humidity. Here the second fermentation takes place, followed by ageing of the sparkling wine on its lees for at least 36 months. After this period the wine is disgorged and, only after a further two months’ rest, is it ready to be released.
Food pairings
The ideal aperitif for evenings with atmosphere. Excellent with sweet Parma and San Daniele hams, or with crostini topped with Colonnata or Arnad lardo. Ideal with fried shellfish.
