The Sicilian cannolo

The Sicilian cannolo is a traditional sweet dating back to Arab rule.
A pillar of "Sicilianness", originally reserved for Carnival, it spread throughout the region, changing in flavour but never in shape, and went on to win admirers all over the world.

The name refers to the river canes around which the shells were rolled and then fried.

Its simplicity makes it a versatile sweet full of surprises, and today it is eaten in many ways: with pistachio cream, with lemon, with chopped hazelnuts or almonds, or simply with ricotta.
